Chorizo Pumpkin Soup


 

  • 5 cups chicken broth, or chicken stock (turkey broth will also work fine and lend a different flavor)
  • 3 cups puree'd pumpkin (canned is fine)
  • 3/4 cup heavy cream
  • 1 lb chorizo cooked chopped coarsely
  • 2 tablespoons oregano
  • 1/2 teaspoon cumin
  • 5 cloves finely chopped garlic
  • 2 average size potatoes, diced into 1/2 sized chunks
  • 1/2 cup chopped cilantro
  • 1/2 cup chopped onion (for garnish)
  • 1/3 cup onion chopped (to saute)
  • 1 tablespoon oil
  1. Heat the oil in a large pot
  2. Saute the 1/3 cup onions and the garlic over medium heat for about 1 minute
  3. Carefully add in the broth, pumpkin, chorizo and potatoes
  4. Stir in the oregano and cumin
  5. Bring to a boil and then turn down to a simmer
  6. Simmer for about 45 minutes or until potatoes are tender
  7. Remove from heat and let cool for 10 minutes
  8. Stir in cream
  9. Serve immediately topped with a tablespoon each of cilantro and onion
