Asian Style Gazpacho Soup


 


  1. 6 tomatoes, seeded and finely chopped
  2. 2 cups chicken broth
  3. 1 teaspoon dry sherry
  4. 2 tablespoons chopped fresh cilantro
  5. 1 tablespoon light soy sauce
  6. 4 scallions, white part only
  7. 4 thin slices fresh ginger
  8. 1/4 teaspoon Chinese chili sauce
  9. 2 limes

  1. Place tomatoes in a 2-3 quart saucepan over low heat. Add the broth, sherry, cilantro, soy sauce, scallions and ginger. Simmer for 20 minutes. Remove from heat and allow to cool for a few minutes.
  2. Puree in a food processor/blender. Chill.
  3. Before serving, stir in the chili sauce. Grate the peel from 1 lime and add it to the soup. Squeeze the juice from both limes into the soup.
  4. Serve in chilled bowls.
