Mediterranean Rub


 

  1. Zest of 2 lemons
  2. 1/3 cup thinly sliced garlic cloves
  3. 1/3 cup fresh rosemary
  4. 1/4 cup fresh sage leaves
  5. 1/4 cup coarsely ground black pepper
  6. 1 tablespoon salt

  1. Place all ingredients in the bowl of a food processor and process until garlic, herbs and lemon zest are chopped finely and ingredients are thoroughly combined.
  2. Store covered in refrigerator.
  3. Makes about 1 cup, enough for 2 pork roasts.
