Mediterranean Rub
- Zest of 2 lemons
- 1/3 cup thinly sliced garlic cloves
- 1/3 cup fresh rosemary
- 1/4 cup fresh sage leaves
- 1/4 cup coarsely ground black pepper
- 1 tablespoon salt
- Place all ingredients in the bowl of a food processor and process until garlic, herbs and lemon zest are chopped finely and ingredients are thoroughly combined.
- Store covered in refrigerator.
- Makes about 1 cup, enough for 2 pork roasts.
