Caribbean Jerk Rub


 

  1. 2 tablespoons dried minced onion
  2. 1 tablespoon garlic powder
  3. 4 teaspoons crushed dry thyme leaves
  4. 2 teaspoons salt
  5. 2 teaspoons ground allspice
  6. 1/2 teaspoon ground nutmeg
  7. 1/2 teaspoon ground cinnamon
  8. 1 tablespoon sugar
  9. 2 teaspoons black pepper
  10. 1 teaspoon cayenne pepper

  1. In jar with tight fitting lid, shake together all spices and seasonings.
  2. Store tightly covered at room temperature.

Makes about 1/2 cup, enough for 4-6 pork chops. A great "dry marinade" for chops, tenderloin, or roast.
