Tuna Loaf Casserole


 

A quick and easy (and delicious!) way to serve tuna as a main dish.

  1. 12 ounces canned tuna
  2. 1/4 cup minced onion
  3. 1/4 cup lemon juice
  4. 1/4 teaspoon salt
  5. 1/4 teaspoon pepper
  6. 1/2 teaspoon ground thyme
  7. 2 cups coarse cracker crumbs
  8. 1/2 cup milk
  9. 4 eggs beaten
  10. 1 tablespoon olive oil

  1. Drain tuna saving the liquid
  2. Put tuna in a mixing bowl
  3. Add onion, lemon juice, salt, pepper, thyme and cracker crumbs
  4. Mix
  5. Add tuna liquid plus enough milk to make 1 cup
  6. Add eggs and olive oil
  7. Mix
  8. Spoon into a loaf pan or casserole dish
  9. Bake at 350 degrees for 1 hour or until set in the center.
