Apricot Cherry Cobbler
- 8 fresh ripe apricots
- 1/3 cup sugar
- 1/3 cup sugar
- 2 cups fresh sweet cherries, pitted
- 1 Tbsp. flour
- 1 cup all purpose flour
- 1/2 cup yellow cornmeal
- 1/4 teaspoon salt
- 1 Tbsp. sugar
- 2 teaspoons. baking powder
- 1/2 teaspoon orange zest
- 1/4 cup unsalted butter, chilled
- 3/4 cup lowfat milk
- Heat oven to temperature 375 degrees.
- Combine apricots and sugar; set aside.
- Combine cherries and flour; set aside.
- Combine next 6 ingredients.
- Cut in butter until mixture resembles coarse meal.
- Add milk; stir just to moisten dry ingredients.
- Combine set-aside fruit in well-greased 8 inch baking dish.
- Spoon batter over top.
- Sprinkle remaining sugar on top.
- Bake 25 to 30 minutes, or until golden brown.
- Cool slightly and serve.
