Apricot Cherry Cobbler


 

  1. 8 fresh ripe apricots
  2. 1/3 cup sugar
  3. 1/3 cup sugar
  4. 2 cups fresh sweet cherries, pitted
  5. 1 Tbsp. flour
  6. 1 cup all purpose flour
  7. 1/2 cup yellow cornmeal
  8. 1/4 teaspoon salt
  9. 1 Tbsp. sugar
  10. 2 teaspoons. baking powder
  11. 1/2 teaspoon orange zest
  12. 1/4 cup unsalted butter, chilled
  13. 3/4 cup lowfat milk

  1. Heat oven to temperature 375 degrees.
  2. Combine apricots and sugar; set aside.
  3. Combine cherries and flour; set aside.
  4. Combine next 6 ingredients.
  5. Cut in butter until mixture resembles coarse meal.
  6. Add milk; stir just to moisten dry ingredients.
  7. Combine set-aside fruit in well-greased 8 inch baking dish.
  8. Spoon batter over top.
  9. Sprinkle remaining sugar on top.
  10. Bake 25 to 30 minutes, or until golden brown.
  11. Cool slightly and serve.

Serves 8.
