Black Bean Salsa


 

  1. 1/4 cup Corn, yellow
  2. 1 cup Black Beans, canned
  3. 1/2 cup, chopped Red Bell or Sweet Peppers, raw
  4. 1/2 cup chopped Celery, raw
  5. 1/2 cup, chopped Green Bell or Sweet Peppers, raw
  6. 1/4 cup Lime juice, raw
  7. 1/16 cup Olive Oil
  8. 1/4 cup Coriander (cilantro) leaves, raw
  9. 1/4 cup, chopped Onions, raw

  1. Drain black beans and place in a bowl. Add corn, onions, peppers, and celery. Whisk together olive oil, lime juice and cilantro. Pour over salsa and chill.
  2. Serve over red pepper shell with lime wedge.
