Avocado Corn Salsa


 

  1. 1 cup corn kernels, blanched fresh OR thawed frozen
  2. 1 small banana pepper, seeded and chopped
  3. 1/4 cup diced red radished
  4. 1/8 cup thinly sliced green onion
  5. 1 avocado, diced
  6. 1 tbs. lime juice
  7. 1/2 tsp white wine vinegar
  8. 1 tsp exrta-virgin olive oil
  9. 1/4 tsp dried oregano
  10. Dash of ground cumin
  11. Dash of Tabasco sauce
  12. Freshly ground black pepper (optional).

  1. In a medium bowl, combine corn, radish, banana pepper, and green onion. In a seperate bowl, combine half of the diced avocado and the lime juice. Stir thoroughly to coat.
  2. Blend the other half of the avocado, vinegar, oil, oregano, cumin, and Tabasco in a blender until smooth. Pour it over the corn mixture and stir.
  3. Add the avacodo mixture and serve immediately.
